Ingredients

250g of strong white flour
1 tsp of salt
1 tbsp of golden caster sugar
10ml of vegetable oil
1 tsp of dried yeast
150ml of tepid water
3 large tbsp of Yummy Things Onion Chutney
1 tbsp of pine nuts
1 tbsp of grated parmesan cheese ½ tbsp of olive oil

Method

  1. Mix the flour with golden caster sugar, salt, vegetable oil and dried yeast. Add water and knead for about 10 minutes. Cover and leave to rise in a warm place for 1 to 2 hours until doubled in size.
  2. Punch down the dough onto a floured surface and roll into a rectangle, about 40cm x 25cm. Drizzle the olive oil and rub to spread it onto the dough with your hands. Then spread the Yummy Things onion chutney, sprinkle the pine nuts and top it with parmesan cheese.
  3. Roll the dough up like a Swiss roll from the long side. Cut the dough in half down the length. Lay the 2 lengths cut-side up side by side and twist to make a twisted rope. Pull both ends together to make about a 20cm ring. Leave to rise in a warm place for another 30 minutes to an hour until doubled in size.
  4. Heat the oven to 190C/fan 170C/gas5. Bake in the oven for 25 minutes until golden and risen. While warm brush with melted butter if you wish and cool before serving.

Perfect accompaniment to brunch, lunch.
